Some of my favorites are Chuys (a mexican restaurant with some flare), the Highland Park Pharmacy (an old school soda shop with great milkshakes), Wild About Harrys (an ice cream and custard shop), Adlemos (a nice small romantic Italian restaurant). Knox-Henderson has inexpensive restaurants, fancy restaurants, chains, mom/pop, furntiture stores, toy stores, an Apple Store, etc, etc. I don't have anything against the suburban masterplanned mixed use area but the old organic version has a better feel. So Knox-Henderson is kind of the real version of what has become the common place fake generic suburban mixed use shopping area.
